Tea Tips
For fine grain teas, the brewing time is less by
virtue of the fact that a greater surface area of the tea is exposed to the
boiling water. For instance, most powder teas can be consumed after boiling for
two minutes. However, larger leaf teas necessitate five or more minutes.
In general, three to five minutes should suffice. Black teas require more
time then green teas.
However, the longer that a tea steeps, the more
likely it will become astringent or bitter to the taste. Some tea aficionados
enjoy some astringency, whereas others recommend putting the tea into infusers
or paper filters (rather than directly in the pot) so that the leaves can be
readily removed from the pot after the prescribed steeping time. This also
preserves more sustainability in the leaves if you are interested in reusing
them to brew them another time..
Temperature
With black teas, the hotter the water
the better. Bring it just to a boil and let it back off a couple of degrees.
Green teas are usually more delicate and perform better in water in the
160 to 185 degree range so that it is preferable to allow the water to cool
slightly before
brewing the tea. You should allow the water to boil and then take it off the stove, allowing
it to cool for two minutes or so before pouring it on the green leaves.
